All I recall the GUI was very plain with simple colour schemes...

which version did you have?  I think they're on ubuntu 16.something now...

UC browser 冇 ad block

如今好似得 Dolphin 同 Adblock browser 有 ad block, 但冇 flash plugin

GUI has been very good since ubuntu 11.

Btw,  I use Xubuntu, the variant,  which uses a different Window Manager -- xfce4,  
xfce4 is very much like Windows7 interface.

My understanding is that ubuntu has several variants.  Do they just differ in interface or are they more suitable for different devices?

They all carry the same drivers for different devices. So if one works, the others work on that computer too.
Now, the differences
Ubuntu uses Gnome as  Window Manager, which include a suite of software like mplayer, their own design of office suite, email, etc.
Kubuntu uses KDE, which is just like Gnome, but different software packages. KDE used to be the best because they have more multimedia packages.
Then Xubuntu, which uses Xfce4 as window manager. Simple, less bulky.

You could download all 3 versions, burn to cd and run it "live" without actual installation with your current machine.
See which version you like best.

我記得好似個 PANEL 面板 ( 即 WINDOWS 條 "START MENU BAR" INSTALL後會在DESKTOP上面,
可以UNLOCK 移番落下面
